Easy To Prepare Green Snacks For St. Patrick’s Day

St. Patrick’s Day is just around the corner. It is celebrated every 17th of March and St. Patrick is widely known as the Patron Saint of Ireland.

Many people around the world celebrating St. Patrick’s Day will be preparing festive gatherings for family and friends. And here are some easy to prepare green snacks for your Paddy’s Feast.

St. Patrick’s Parfait

What you need:
1 (3 ounce) box Jell-O instant pistachio pudding mix (4-serving)
2 cups milk
2 kiwi fruits, peeled and thinly sliced
Cool Whip or any whipped cream
3 drops green food colouring
Green sugar as garnishing (used in Christmas cookie sprinkles)

DIRECTIONS

Prepare pudding according to package directions using the milk; chill until set.
When pudding is chilled, layer pudding, kiwifruit and green-tinted Cool Whip in clear dessert glasses (wine glasses will work well)– do pudding-fruit-coolwhip then repeat, ending with a layer of Cool Whip.
Sprinkle a tiny amount of green coarse sugar on parfaits and refrigerate until serving.

 

St. Patrick’s Day Crispy Treats

What you need:
6 cups Rice Krispies
1⁄4 cup margarine
1⁄2 teaspoon vanilla extract
1⁄2-1 teaspoon green food coloring
1 (10 ounce) package mini marshmallows

DIRECTIONS

Line a 13x9x2 baking pan with foil, lightly spray with Pam cooking spray or butter.
Melt margarine in a large pot on low heat.
Add marshmallows and stir constantly until melted.
Remove from heat.
Add vanilla extract and food colouring stir until smooth.
Add cereal quickly to the melted marshmallow mixture, stir until well coated.
Press into the ready greased baking pan with a buttered spatula. Set aside and cool.
Cut into bars or you can use a shamrock cookie cutter.

 

Kiwi Lime Jell-O with Yogurt

What you need:

1 package lime Light Jell-O Gelatin
1 cup boiling water
2 cups ice cubes
1 cup kiwi fruit, thinly sliced and slices cut in half,reserve 4 slices for garnish
1⁄4 cup plain yogurt

DIRECTIONS

In a bowl, add boiling water and jello powder, stir until completely dissolved.
Add ice cubes, stir until jello thickens (3 to 5 minutes).
Remove any icecubes that have not dissolved.
Remove 1/2 cup jello and set aside, to chill for 30 minutes.
Chill remaining jello separately until slightly thickened, about 30 minutes.
Fold kiwifruit slices into remaining jello.
In a small bowl, add the 1/2 cup reserved jello and 1/4 cup yogurt.
Beat reserved jello and yogurt, at high speed, until doubled in volume.
Pour jello/yogurt mixture over kiwifruit/jello mixture.
Chill until set.
Top each serving with a blurb of yogurt, with a slice of kiwifruit arranged on it.
This dessert looks special set in stemmed clear glasses.
